Healthy Vegetables – Balsamic Brussel Sprouts With Pine Nuts

We all know that health and weight loss does not only mean you have to exercise, with exercise equipment such as the Sole S77  Treadmill, but also healthy eating that includes lots of vegetables. This does not mean, however that you have to eat tasteless meals. Have a look at the recipe below. Even though you have some healthy fat in it coming from the olive oil and pine nuts, it is still a very healthy and tasty dish. So, why not try it and make it part of your healthy lifestyle.

Ingredients for your healthy vegetable dish:

  • 1 lb fresh Brussel sprouts, ends trimmed, cut in halves
  • 3 Tbsp olive oil
  • 1 Tbsp balsamic vinaigrette
  • 2 Tbsp freshly grated Parmesan cheese
  • 1/2 tsp sea salt
  • 1 Tbsp toasted pine nuts

Method for your healthy vegetable dish

  1. Preheat oven to 450 degrees.
  2. In large bowl, toss together the Brussel sprouts, olive oil, and balsamic vinaigrette.
  3. Dump Brussel sprouts onto a large shallow roasting pan.
  4. Roast in preheated oven at 450 degrees for 25 to 30 minutes, stirring around a few times during the cooking time.
  5. The sprouts should be nicely browned.
  6. Toast the pine nuts just before sprouts are done roasting; put in dry (no oil) skillet over medium heat and shake pan until pine nuts lightly brown, then remove from heat.
  7. Remove sprouts from oven when done and dump into large bowl.
  8. Sprinkle Parmesan cheese, salt, and pine nuts on, toss, and serve hot.

Because Parmesan cheese contains a lot of fat, you only need to use a little as it has a very strong taste. Never mix it in your dish as it will lose some of its taste. Only sprinkle it over your dish to get the full cheesy taste without too much fat.
