Low Fat Anytime Vinaigrette Recipe
When you are trying to shed a few pounds it does not mean you have to eat tasteless food. Take this low fat anytime
vinaigrette recipe as an example. You can liven up any salad recipe with it without adding on any fat.
The recipe calls for vigorous whisking, but I prefer using a food processor such as the Cuisinart Custom Pro 11 Cup Stainless Steel Food Processor. It makes light work and it gets rid of all the whisking.
So, here is your recipe to try:
Anytime Vinaigrette Recipe
Method:
1/2 cup red wine vinegar
- 1/2 cup spicy mustard
- 1/4 cup dry white wine
- 1/2 TBSP paprika
- 1/2 TBSP hot sauce
- 1/2 TBSP salt
- 1/2 tsp lemon juice
- 1/8 tsp cayenne
- 2 cups olive oil (I leave this out)
- In large bowl, whisk together the first 8 ingredients until well blended.
- While whisking vigorously, drizzle in oil, continuing to whisk until mixture is smooth and emulsified. (To keep it low fat, make sure you only use enough to get the consistency you want. I only add about 1 tablespoon and use the very light vinaigrette as it is, no oil is really needed if you do not want a thick sauce)
- Poor into tightly sealed glass jars and refrigerate until needed.
- Keep refrigerated and use as salad dressing or marinade for several months.
